Harvesting the olives

The olive harvest takes place between October and November. By combining traditional agricultural methods with modern techniques, we ensure the highest quality and freshest results while avoiding undue stress on the trees. The harvest is a ritual that has united us for generations, bringing us together year after year.

The transformation process

Once harvested, the olives are quickly transported to the mill to preserve their delicate aroma and natural properties. The process involves milling followed by extraction, separating the oil and preparing it for bottling. At the mill, our agronomist, much like a skilled alchemist, unlocks the extraordinary characteristics and distinct personality of our oil.
